The occasion to discover the real taste of wild fish simply cooked with seasonal vegetables. Fall’s menu: dishes are between tradition and modernity, such as butternut soup with squid; steamed Pollack infused with lemongrass; monkfish cooked in a Bourguignon way; quince tart with pear sorbet.
